Recently my family had the most enjoyable experience of holidaying on your lovely island, and attending the wedding of our daughter.Although we stayed at a private house we ate most of our meals at The Rarotongan.  After attending one of your shows (traditional dancing and firedancing) we returned several times for the great meals.

We enjoyed one of your meals so much that we would like to recreate it, and hope that your chef won't mind sharing his recipe.  I think it might have been called Chicken Tropicana, and from memory it was chicken breast stuffed with mango cream cheese, wrapped in bacon and filo pastry, and served on coconut-flavoured mashed potatoes and corn.

We would like to make it for ourselves at home but don't want to mess it up.  I hope that you can share the recipe for this lovely dish and look forward to your reply."
